2005 Yosemite View Sauvignon Blanc

Three words describe this wine: fruit, fruit, and fruit. Harvested on two dates in September of 2005 and bottled right after Valentines Day 2006, this young wine is absolutely delightful. Lively and exuberant, it smells and tastes like a big bowl of sliced fruit! In wine-speak, it can best be described as 'fruitforward in the extreme' and is a great wine for general sipping or as an aperitif. It will also be a perfect wine for brunch or a Saturday afternoon on the patio.

Tasting Notes
Our 2005 Sauvignon Blanc is very exotic and very much in the 'California style.' Fresh and fruity, it exhibits typical grapefruit and herb characteristics at its core. But the overall impression is more like a fruit cocktail on steroids! The Pinot Gris gives this blend some high-toned tropical notes, as well as a distinct, Bartlett pear flavor. Bone dry but not overly tart it will pair beautifully with simply prepared seafood and chicken dishes, and especially those accompanied by a fruit chutney. DELICIOUS!

Specifically, this Sauvignon Blanc exhibits typical varietal characteristics along with pronounced floral and tropical components that give the wine its charm and intrigue. The blend is made up of 80% Sauvignon Blanc and 20% Pinot Gris. It’s the latter that gives the finished wine its exotic character and up-front aromas, as well as a distinct Bartlett pear flavor.

Fermentation Data
This blend is made from just two lots of wine, each fermented entirely in stainless steel tanks at 50–55 degrees Fahrenheit. Fermenting at this very cool temperature helps preserve the fresh fruit flavors of the grapes. For this same reason, both were inoculated with M2 yeast, which tends to produce straightforward, but very fruity wines. The two different batches were blended, then fined, stabilized and filtered together in order to facilitate the integration of their respective flavor profiles.
